These grapes come from vineyards in different location (one on the Ionio side, the other one on the Adriatic side) that are over 25 years old and are made up of “Alberello” vines. The grapes are harvested during the first few days of September. After they are crushed and de-stemmed. The must macerates on the skins for 5-7 days at 24-26 C. During this stage, the partial raising that is characteristic of mature Primitivo grapes contributes to the formation of this wine’s notable bouquet. Malolactic fermentation in stainless steel.
