2007 Bishop’s Peak Pinot Noir

The 2007 year began with an exceptionally cold winter which led to some frost damage.
Bud break was very even and the remainder of the year hosted mild temperatures with one
unusual heat spike in September. The harvest was small, yet the quality of the fruit was
exceptional with concentrated, intense flavors.
The 2007 Bishop’s Peak Pinot Noir offers aromas of raspberry and rose petals, with undertones
of mushroom and forest floor. These continue on the palate, along with bright flavors of sour
cherry and a long, slightly chalky finish. Enjoy this elegant wine with pasta and
sautéed mushrooms.

Hand harvested September 5 through October 12, 2007
Grapes grown at C &M (Nipomo), Angel Vineyards (Arroyo Grande),
C-Bar (Edna Valley), Wilton Webster and Orchid Hill (Paso Robles, westside)
Fermented using native yeasts
Aged 10 months in French oak, 20% of which were new barrels
