The juice from this wine is drawn off after the de-stemmed grapes have been soaking in their own juices for about 6 hours. The wine is then cold settled racked and fermented cold. The grapes used were quite ripe so the rosé is a little on the dark side, but one taste will convince that it is indeed a fine dry rosé. It has clean nose and the taste reminds one of tart raspberries.

"Stellar Organic Winery, situated in Trawal, 275 km north of Cape Town on the road to Namibia, is the largest producer of fine organic wines in South Africa. The organic vineyards and winemaking process are fully certified by Control Union Certifications, based in the Netherlands.
